Well researched and written book. The author gives an in-depth background into tofu, the varieties, and the many methods of cooking it. The colourful pictures are enjoyable to look at and helpful. I will be purchasing this book, soon, for the recipes which are appetizing and interesting.

Fascinating stories about the people who make tofu. Most of the recipes involve some form of meat (pork, bonito flakes, etc.), but there are some vegetarian recipes.
